Hosting brunch this holiday season? If you are looking for a creative way to entertain (without the heavy ingredients like cheese, salami, etc), you'll love today's read. We're pairing homemade oat-pancakes with a selection of superfood "dips" and a variety of fresh fruit.
Why is it called the “Wonder” MOODBoard? Because the dips and oatmeal are infused with adaptogens and nootropics to evoke a feeling of wonder. The matcha, blue majik, purple sweet potatoes, and beets give the yogurt dips bright, fun colors as well as MOOD-enhancing elements. It's pleasing to the eye and will definitely give you a nutritional boost during the indulging holidays!
MINI PANCAKES
Ingredients:
- 3 eggs (vegan - replace with flax/chia eggs 1:1)
- 1 cup almond flour
- 1/2 cup Mylk Labs oatmeal (any flavor)
- 1 medium ripe banana
- 1 1/4 teaspoon baking powder
- 1 teaspoon vanilla extract, optional
Instructions:
- Add 1⁄2 cup of Mylk Lab oats flavor of choice and 1 cup of almond flour into blender or food processor. Blend until oats are ground into a flour consistency.
- Add the remaining ingredients to the blender or food processor. Blend for 1-2 minutes, stopping to scrape down the sides of the blender as necessary.
- Once the batter has formed heat a large non-stick pan over medium heat with a little bit of coconut oil.
- Using a tablespoon, scoop 2 tablespoons of batter per pancake and pour it into the pan.
- Allow the pancakes to cook for around 2 minutes on the first side or until the edges are firm and browned. Flip and cook for another minute on the other side.
- Remove the pancakes from the pan and repeat until all of the batter has been used. This recipe makes approx. 10-12 mini pancakes
BLUE MAJIK COCO WHIP DIP
Ingredients:
- 8 oz coconut or dairy-free yogurt of choice
- 1⁄2 coconut in husk (for bowl)
- 1 tsp E3live blue majik powder
- 1 container Mylk Labs Almond & Pink Salt oatmeal cup
- If using plain yogurt, add in honey or maple syrup to desired sweetness
Instructions:
- Mix yogurt and blue majik powder in a bowl
- Prepare the oatmeal via instructions on the container
- Add prepared oatmeal into the coconut bowl
- Add yogurt mixture into the coconut bowl with the oats
- Optional toppings - sliced fruits, almonds, edible glitter, dried fruit
I LOVE YOU SO ‘MATCHA’ COCO WHIP
Ingredients:
- 8 oz coconut or dairy-free yogurt of choice
- 1⁄2 coconut in husk (for bowl)
- 1 tbsp Matcha powder
- 1 container Mylk Labs Coconut & Cinnamon oatmeal cup
- If using plain yogurt, add in honey or maple syrup to desired sweetness
- Optional - 1 tsp pearl powder for healthy hair, skin + nails for a dewy morning glow
Instructions:
- Mix yogurt, matcha + pearl powder in a bowl
- Prepare the oatmeal via instructions on the container
- Add prepared oatmeal into the coconut bowl
- Add yogurt mixture into the coconut bowl with the oats
- Optional toppings - sliced fruits, almonds, edible glitter, dried fruits
