What better way to surprise your mom on Mother's Day than with a delicious, wholesome breakfast in bed! We've got 3 easy recipes that we're sharing with you: Mini Pancakes, Microwavable Oatmeal Muffin, and Healthy French Toast.

1. Mini Pancakes
Ingredients:
- 1 cup whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 medium banana, mashed (1/2 cup)
- 1 egg, or flax egg
- 3/4 cup almond milk
- 1 tbsp maple syrup
- pinch of salt
Mix all the ingredients together, making sure not to overmix. Heat an oil skilled on medium. Using 1/4 measuring cup, pour pancake batter on. When the pancake starts to bubble (1 min 15 seconds), flip the pancakes and cook for another minute. Transfer out and repeat with the remaining batter until all the pancakes are cooked. Enjoy with fruits, nut butter, seeds, and any other toppings you like!
2. Microwavable Oatmeal Muffin
Ingredients:

- 1 large brown egg
- 1 tbsp almond milk or water
- 1/2 banana, mashed
- 1/2 tsp baking powder
Shake to redistribute then peel open the plastic of your oatmeal cup. Throw in half a banana and mash with a fork against the cup. Add the remaining ingredients and mix well. Place the oatmeal cup without the lid into the microwave and cook 1:30 - 2:00 min.
3. Healthy French Toast
Ingredients:
- 2 pieces whole wheat toast
- 2 tbsp almond milk
- 1 egg, or flax egg
- 1/2 tbsp maple syrup
- 1 tsp coconut oil, or ghee
Combine all the wet ingredients together in a shallow bowl. Heat the oil on a medium skillet on medium-high. Press the toast into the mixture, flip to coat both sides, then drop it into the pan. Repeat for the second toast. Cook ~2 minutes per side then top with your choice of fruit, nut, and drizzle.
