Strawberry Cereal Macaroons

Ingredients:
- 1-1/2 cup shredded coconut
- 1 cup of your favorite cereal (we used Arrowhead Mills)
- 1/2 cup freeze dried strawberries
- 1/2 cup coconut butter
- 6-7 large medjool dates, softened
- 3 oz dark chocolate chips
- 1 tsp olive oil
Directions:
- Blend the coconut, cereal and strawberries into a fine meal.
- Pit the dates and soften in hot water for 30 seconds. Throw them into the blender with the meal and pulse until combined.
- Melt the coconut butter and pour in. Blend again.
- Dump the filling out into a bowl and make sure it's all combined well.
- Line a cookie sheet with parchment paper and scoop ~14 tablespoon balls of dough (we used a cookie scoop). Let this harden in the fridge while we melt our chocolate.
- Using a double boiler (put a bowl on top of a pot with a little water), melt 3oz chocolate chips.
- Once the chocolate is melted, add the oil to create a silkier chocolate to dip.
- Take out the macaroons, dip each into the chocolate and place back onto the parchment paper.
- Refrigerate for 10 minutes and you're ready to eat!
