Childhood Cereal. Raw Coconut. Tart Strawberry. Chocolate Dipped.

Strawberry Cereal Macaroons 

Makes ~14 bites
Prep Time:  15 Minutes

Ingredients:
  • 1-1/2 cup shredded coconut
  • 1 cup of your favorite cereal (we used Arrowhead Mills)
  • 1/2 cup freeze dried strawberries
  • 1/2 cup coconut butter
  • 6-7 large medjool dates, softened
  • 3 oz dark chocolate chips
  • 1 tsp olive oil
Directions:
  1. Blend the coconut, cereal and strawberries into a fine meal.
  2. Pit the dates and soften in hot water for 30 seconds. Throw them into the blender with the meal and pulse until combined.
  3. Melt the coconut butter and pour in. Blend again.
  4. Dump the filling out into a bowl and make sure it's all combined well. 
  5. Line a cookie sheet with parchment paper and scoop ~14 tablespoon balls of dough (we used a cookie scoop). Let this harden in the fridge while we melt our chocolate.
  6. Using a double boiler (put a bowl on top of a pot with a little water), melt 3oz chocolate chips.
  7. Once the chocolate is melted, add the oil to create a silkier chocolate to dip.
  8. Take out the macaroons, dip each into the chocolate and place back onto the parchment paper.
  9. Refrigerate for 10 minutes and you're ready to eat!
