Memorial Day always feels like the start of summer which means beach trips, BBQs and lots of hot dogs. Be the person that everyone thanks and make this DELICIOUS (and healthy) vanilla crème fruit salad!
What exactly is a fruit salad and why can't we just eat fruit by itself? Well, essentially it's fruit that's been mixed with a sweet, creamy dressing. Imagine an actual leafy salad, but you swap out the lettuce for fruit. Easy enough, right? Let's get started!
Vanilla Crème Fruit Salad
Serves: 4
Prep Time: 10 minutes
Ingredients:
- 2 cups strawberries
- 2 cups blueberries
- 2 cup green grapes, seedless
- 2 cups pineapple, cubed fresh
- 1/3 cup cashews, soaked overnight or soak in boiling water for 10 minutes
- 1/2 cup dates
- pinch of vanilla bean powder or 1/2 tsp vanilla extract
- pinch of salt
- Optional topping: 5-min stove-top granola
Instructions:
Prep all the fruit and throw it into a bowl. Combine the cashews, dates, and spices into a blender and add enough water to thin. You want it to have a smooth but creamy consistency. Pour over fruit salad and stir it up. Let sit for 5-10 minutes to soak up the flavors then serve immediately. Feel free to sprinkle on some granola for an extra crunch!
