Have you ever had a baked donut? It's like a real donut but with a cake-like texture. Since they're baked rather than deep fried, it's much healthier, lower in calories/fat and has a heartier bite to it. Ultimately, a delicious healthy dessert alternative if you're a donut lover! If you don't have a donut pan, we hiiiiighly suggest you buy one ASAP. They're available at Target, Walmart or Amazon for about $10 bucks only.

These donuts are perfect for breakfast, brunch, dessert or to take along to any get together. Hope you enjoy this recipe as much as we do! x

Baked Coconut-Oat Donuts

Yields: 4 donuts

Ingredients:

  • 1x Mylk Labs Toasted Coconut & Cassia Cinnamon Oatmeal Cup
  • 1/3 Cup Whole Wheat Flour
  • 1 Tbsp Coconut Sugar
  • 1 Tsp Baking Powder
  • ⅛ Tsp Cinnamon
  • 2 Tbsp Plain Greek Yogurt or your favorite non-dairy Greek Yogurt
  • ½ Cup Almond Milk
  • ¼ Tsp Vanilla Extract
  • ½ Tsp Coconut Extract, or omit if you don't have it

Donut Icing:

  • ¼ Cup Plain Greek yogurt
  • 2 Tbsp Pure Maple Syrup
  • ¾ Tsp Coconut Sugar
  • ⅛ Tsp Vanilla Extract
  • ½ Tsp Coconut Extract, or omit if you don't have it
  • Unsweetened Shredded Coconut Flakes, Toasted

    Instructions:

    1. Preheat the oven to 350 ° (F). Prepare a donut pan with non-stick
      cooking spray. Set aside.
    2. In a medium-size bowl whisk together the oatmeal, whole wheat flour,
      coconut sugar, baking powder, and cinnamon.
    3. Add the yogurt, almond milk, vanilla extract, and coconut extract.
      Whisk together until combined.
    4. Using a spoon to fill the batter into the donut pan cavities about ¾ of
      the way.
    5. Bake for 12-16 minutes. Allow them to cool for 10 minutes before
      transferring to a wire rack to cool completely.

    To make the icing:

    1. Whisk all the ingredients together and dip the top of the donuts into the icing. 
    2. Double dip them if you'd like the icing to be thicker.
    3. Sprinkle shredded coconut to top and let it dry for 10-15 mins.
